This sauce has been a long time in the making. It's very easy to make a chilli sauce hot, but it's a different story when you try to make an extra hot sauce tasty, especially when the vast majority of the ingredients is the chilli sauce itself.
When making our other sauces, we roast the tomatoes, roast the bell peppers, caramelise the onios, add carrots for a natural sweetness, and even cold smoking our salt and pepper to add additional layers of flavour. However, with a sauce that is 75% chilli, and still needed vinegar added to make everything shelf stable, we had to carefully choose the other ingredients to ensure everything came together as we had planned.
By looking at our work over the past few months with dry/BBQ rubs we decided that the best blend of flavour would reflect by our Taco rub, which used a blend of onion, garlic, cumin, and lime. Strong flavours that we knew would push past the over powering flavour of the Carolina Reaper, allowing us to create an extra EXTRA hot sauce, that is not just about the heat but is actually useable on meals.
