

When I created the Banshee BBQ range at Rock A Doodle Do Belfast Hot Sauce, I didn’t want to make another generic BBQ sauce.
There are already thousands of BBQ sauces on the market. Most of them taste the same. Overly sweet. Artificial smoke flavour. No depth. No personality. No proper heat.
I wanted to create something different.

I wanted to build a BBQ sauce range that reflected everything I love about barbecue culture, chilli peppers, music, smokehouse cooking, and bold flavour. I wanted sauces that could stand proudly beside some of the best craft BBQ sauces in the UK while still having their own unique Belfast identity.
That’s where Banshee BBQ came from.
The range combines American BBQ inspiration, proper chilli heat, premium Irish whiskey, and small-batch craftsmanship into sauces designed for real BBQ lovers. Every flavour has its own personality, its own purpose, and its own level of intensity.
Over the years, the range has developed a loyal following across Ireland and the UK, and honestly, seeing people connect with these sauces has been incredible.

I’ve always been obsessed with proper BBQ culture.
Not just grilling burgers in the garden, but real low-and-slow barbecue. Smoked brisket. Sticky ribs. Wings dripping in sauce. Burnt ends. Pulled pork cooked for twelve hours. Deep smoky flavours layered with spice and sweetness.
American barbecue culture fascinated me because every region does things differently.
Kansas City BBQ is sweet and sticky.
Texas BBQ focuses heavily on smoke and beef.
Carolina BBQ leans into vinegar and tang.
Memphis is all about rubs and slow cooking.
I loved all of it.
But I also wanted to create something that reflected where we come from here in Belfast. I didn’t want to copy American BBQ culture. I wanted to take inspiration from it and build something with its own identity.
That’s why the Banshee BBQ range feels different.
It has American smokehouse influence, but it also has Irish creativity, Belfast attitude, and serious chilli heat running through it.
The Smoky Chipotle sauce was one of the first flavours I developed for the range.
I wanted a sauce that captured classic smokehouse flavour while still bringing proper depth and balance. Chipotle chillies were the obvious choice because they naturally carry this rich, earthy smokiness that works perfectly in BBQ sauce.
Chipotle is essentially smoked jalapeño, and that smoky flavour forms the backbone of the sauce.
I combined it with dark brown sugar, tomatoes, smoked seasoning, and whiskey to create something rich, warming, and incredibly versatile.
This is probably the most “traditional” BBQ sauce in the range, but even then, it still has much more personality than typical supermarket products.

The smokiness works beautifully with grilled meat, while the sweetness balances everything out without becoming sickly.
It’s the kind of sauce that makes people immediately ask what’s in it after the first bite.

The Apple Habanero sauce became one of my personal favourites almost immediately.
I’ve always loved habanero chillies because they’re not just hot — they’re incredibly fruity as well. A lot of people miss that because they focus purely on the heat, but habaneros have this tropical sweetness that works brilliantly in BBQ sauce.
I paired them with apple cider reduction because I wanted something that balanced sweetness, acidity, fruitiness, and heat all at once.
The result is a sauce that starts sweet and smooth before the habanero heat slowly builds in the background.
It’s not an aggressive heat.
It’s warm, layered, and addictive.
This sauce works unbelievably well with pork.
Pulled pork, pork belly, bacon burgers, sausages — it just cuts through rich meat perfectly. It also works brilliantly on wings and grilled chicken.
There’s a reason this flavour has become one of the most popular in the range. It hits that perfect balance between sweet BBQ comfort and proper chilli heat.

Asian Zing was where I really wanted to push the range into something different.
I didn’t want every Banshee BBQ sauce to follow the same smokehouse formula. I wanted one flavour that leaned heavily into sticky Asian-inspired glaze territory while still feeling like part of the same family.
This sauce combines sweet, savoury, tangy, and spicy elements into something ridiculously addictive.
It’s sticky.
It’s sharp.
It’s spicy.
And it absolutely clings to food beautifully.
I used Ghost Chilli in this sauce because it creates a slower-building heat that works perfectly with sweeter flavours. Rather than instantly attacking your mouth, the burn creeps up gradually.
That slow heat makes the sauce incredibly moreish.

It’s probably the most versatile sauce in the entire range because it crosses between BBQ sauce, wing sauce, glaze, and dipping sauce all at once.

This is where things start getting serious.
The Trinidad Scorpion sauce is dark, rich, smoky, and aggressive in all the best ways.
I wanted to create something deeper and more complex than a standard hot BBQ sauce, so I started experimenting with unusual flavour combinations like coffee, vanilla, and chipotle alongside Trinidad Scorpion chillies.
On paper, it sounds slightly insane.
In reality, it works unbelievably well.
The coffee adds roasted bitterness and depth.
The vanilla smooths the edges slightly.
The smoke ties everything together.
And then the Trinidad Scorpion chilli arrives like a train.
This sauce has a completely different personality from the others.
It’s heavier.
Darker.
More intense.
I especially love it with beef.
Brisket, steak, short ribs, burgers, smoked beef tacos — this sauce was practically built for smoked meat.
For hardcore chilli fans, this is usually the flavour where they realise the Banshee BBQ range isn’t messing around.

Then there’s the monster.
The Carolina Reaper Banshee BBQ Sauce was created for people who genuinely love extreme heat.
Not gimmick heat.
Not extract burn.
Real Carolina Reaper heat.
I’ve worked with Carolina Reapers for years, and I’m obsessed with the flavour profile they bring when used properly. They’re brutally hot, obviously, but underneath that heat there’s this fruity intensity that works brilliantly in BBQ sauces if you balance it carefully.
That’s the challenge.
Too much Reaper and the sauce becomes unusable.
Too little and there’s no point calling it a Reaper sauce.
I wanted this sauce to hurt properly while still tasting incredible.
The heat builds quickly and aggressively, but the sweetness and smokiness underneath stop it becoming one-dimensional.
This sauce transforms food completely.
A few drops on wings, pizza, burgers, chilli con carne, or pulled pork changes everything instantly.
It’s intense.
It’s savage.
And honestly, I absolutely love it.

One thing I’ve learned over the years is that people can genuinely taste the difference between mass-produced sauce and proper small-batch craft products.
When you produce independently, you have freedom.
Freedom to experiment.
Freedom to push flavour harder.
Freedom to create products with actual personality.
That’s incredibly important to me.
I never wanted Rock A Doodle Do to feel like a soulless food company. I wanted every product to feel like it came from people who genuinely love flavour, chilli culture, BBQ, and creativity.
The Banshee BBQ range probably represents that better than anything else we’ve ever made.

The BBQ scene in Ireland and the UK has exploded over the last few years.
People are buying smokers.
Learning low-and-slow techniques.
Watching BBQ videos online.
Experimenting with different meats and flavours.
Consumers are also becoming far more adventurous when it comes to spice and craft condiments.
That’s exactly why I think independent BBQ sauce brands are thriving right now.
People want flavour.
They want authenticity.
They want products with identity.
That’s exactly what I wanted Banshee BBQ to deliver from day one.
